Spicy Arrabiata Penne and Huevo Rancheros
Tonight, I was in the mood for a simple fresh tomato pasta dish. I decided to make a basic tomato sauce that I can use with pasta for dinner and huevos rancheros for breakfast the next day. It is fresh and quick! This was just for 2 peopel, so multiply it by the number of people you are feeding.
- 1/2 pound penne
- 4 corn tortillas
- 1/4 cup olive oil
- ½ onion chopped
- 2 cloves garlic, chopped
- 4 large fresh tomatoes chopped
- Chile Crunch to taste
- Salt and pepper
- 1/2 teaspoon Italian seasoning
- 6 leaves fresh basil, chopped, plus more for garnish
Basic Tomato Sauce
In a large skillet, sauté the onion until translucent, then add the garlic until fragrant. Add the chopped tomatoes, Chile Crunch, and salt and pepper to taste. Cook about 5-10 minutes on medium heat until the tomatoes become juicy.
Take ½ the sauce and keep for the Huevos Rancheros
For the Penne, add ½ tsp. Italian seasoning to the remaining sauce. Add ½ lb (1/2 box) cooked penne pasta cooked in salted water until al dente and garnish with Parmesan Cheese and chopped basil. Add a little of the pasta water if it is too thick.
In a little canola or vegetable oil, lightly fry 2 corn tortillas (not crispy). Place the tortillas on a plate, cover with 2 fried egg and top with the heated tomato sauce.
