Fideo Soup (Mexican Noodle Soup)

In Mexico, Fide Soup is a traditional staple of every household. Fideo is basically Angel Hair Pasta. You sometimes find it in little nest or broken up, or you can use Angel Hair Pasta.

  • 8 oz Fideo
  • 3 plum tomatoes
  • 1/4 white onion
  • 1 clove of garlic
  • 8 cups of homemade chicken broth
  • Vegetable oil

Cut the tomatoes in half and remove the seeds. Puree the tomatoes, onion, and garlic in your blender and set aside.

Preheat 3 tbsp. of vegetable oil to medium-hot. Add the noodles and stir to coat with oil. Continue stirring until the noodles have started to brown. Remove and drain on paper towels.

Place back in the pot, add the tomato mixture and broth. Cover and bring to a boil. Lower the heat and simmer for about 10 minutes.

Serve and add a teaspoon of Chile Crunch. You can also add chopped avocados.
